The "Gomeran palm honey" is the star product of Gomeran cuisine and is considered a delicacy, a delicatessen of great prestige in the Canary Islands and beyond, since the organoleptic qualities that this honey carries along with the process it requires and the multiple gastronomic uses for which it is utilized have resulted in palm honey being understood as an exclusive product and a benchmark for La Gomera.

The final product is obtained from the cooking of the guarapo. The guarapo is collected in the morning and once it is cleaned of impurities, it is cooked for hours to find the perfect point of cooking. The honey, once preserved, is long-lasting and its gastronomic, medicinal, and dietary properties are extraordinary.
